Wild Rice Soup

1 T. Minced Onion
1 C. Water
1 can cream of chicken soup
1 C. half and half cream
1/2 C. cooked sliced potatoes
1/2 to 1 C. shredded swiss cheese
1 C. cooked wild rice
3 slices bacon, crispy fried & crumbled
Optional ingredients are cooked chicken, carrots, celery, or any other vegetable of choice.
Combine onion & water in qt sauce pan. Bring to boil, reduce heat & simmer 3 minutes. Stir in soup and cream until smooth.
Add remaining ingredients & season with salt and pepper. Heat through, stirring frequently until cheese is melted, Do Not Boil.
Makes 5-6 cups.
