½ cup bite size slices of COOKED ROAST
½ cup mild or medium salsa
¼ cup frozen kernel corn
½ cup shredded Cheddar cheese
1 cup washed, torn-up lettuce
½ cup broken-up tortilla chips
3 washed cherry tomatoes

Combine beef, salsa, corn and half of cheese in microwave-safe dish. Cover with waxed paper and microwave on HIGH, 2½ to 3 minutes or until hot, stirring once. Place lettuce on a plate. Top with tortilla chips. Using a pot holder to handle dish, pour hot meat mixture over top of chips. Sprinkle on remaining cheese. Garnish with cherry tomatoes. Serve with a crusty roll or bread and butter.
Makes 1 serving.
