Cinnamon Cucumber Rings (pickling recipe)

2 gallons sliced cucumbers - large, ripe ones are best
2 cups hydrated lime
Water to cover cucumbers

Peel cucumbers, remove center seed section, slice 1/4 inch thick. Soak slices in lime water overnite. Drain, rinse and soak slices for 3 hours in clear, cool water. Drain, then simmer for 2 hours in the following mixture:

1 cup vinegar
1 oz red food coloring
1 tblsp alum
water to cover

Drain. Bring to a boil the following:

3 cups vinegar
2 cups water
10 cups sugar
8 cinnamon sticks
14 oz pkg red hot candies

Pour boiling syrup over cucumbers. Let set overnight. The next day, pour syrup off and bring to a boil, pour back over cucumbers. do this for 3 days, then put cucumbers in jars, bring syrup to a boil and cover cucumbers.Seal jars. These rings look and taste very much like apple rings.
