A simple and tasty tortilla "sandwich"- cut in wedges for a perfect light meal or for appetizers!

4 10-inch (24 cm) tortillas
4 oz cream cheese, softened
2 tbsp bottled salsa
12 oz deli Roast Beef or leftover roast beef, cut into thin strips
1 green onion, chopped
½ cup shredded Cheddar cheese

Combine cream cheese and salsa. Spread ¼ cream cheese-salsa mixture over entire surface of each tortilla. Top one half of each tortilla with some roast beef strips, green onion and Cheddar cheese. Fold in half and press down gently. Grill about 2 minutes per side or until cheese melts. Cool slightly before cutting into wedges. Garnish with sour cream, guacamole and salsa, if desired.
Makes 4 servings.

TIP: Quesadillas can be baked in single layer on baking sheet at 400°F for about 10 minutes.
